Foodie Friday: Thermomix chocolate brownies

With gifting season upon us, this is the perfect quick, easy and delicious recipe to whip up and give to teachers, daycare staff and neighbours! The personal touch and a fraction of the cost of store-bought!

Ingredients  

  • 220 g butter unsalted, cut into pieces, plus extra for greasing
  • 250 g dark chocolate 70% cocoa solids, cut into pieces
  • 380 g sugar
  • 6 eggs
  • 1 pinch salt
  • 150 g flour
  • 150 g shelled, halved walnuts optional

Instructions 

  • Preheat oven to 170°C. Grease a brownie pan or cake tin (approx. 30 cm x 20 cm) and line with baking paper, letting edges of paper hang over sides of tin (the excess baking paper will serve as handles to lift out the brownies). 

  • Place chocolate in mixing bowl and chop 5 sec/speed 7.

  • Add butter and melt 4 min/70°C/speed 2.

  • Add sugar, eggs, salt and flour and mix 1 min/speed 4. Scrape down sides of mixing bowl using spatula.

  • Add walnuts and mix 10 sec/speed 4.

  • Transfer to prepared cake tin, distributing batter evenly. Bake for 23-25 minutes (170°C), or until a toothpick or skewer inserted in the centre comes out with a few damp crumbs. Remove from cake tin using the baking paper to lift out the brownies. Allow to cool and serve brownies cut in squares.

Notes

If using chocolate with a lower cocoa percentage, increase chocolate and decrease sugar amount. For instance, for chocolate with 50% cocoa, increase chocolate to 360g and decrease sugar to 260g.
